The unique composition of this lecithin enhances both dispersibility and functional performance. As a bread improver, it reinforces the natural emulsifiers present in wheat flour rather than replacing them and can be achieved between 500-1000g per 100kg of flour. For biscuits, this ingredient allows fat reduction of 15-20% without process modification, with dosage ~0.4-1% on dough.

This product can be used independently as a natural bread improver in some applications or combined with L-ascorbic acid and enzymes for optimal results.
