Organic Low Moisture Potato Starch is a native potato starch that has been dehydrated to a maximum moisture content of 6%. The dehydration process enhances its ability to absorb free or migrating moisture in dry applications. This hygroscopic behavior allows the starch to act as an effective water absorbent in dry blend formulations, helping to control moisture distribution and prevent localized wetting.
In powdered sugar, Organic Low Moisture Potato Starch improves flowability by absorbing surface moisture that can lead to clumping and caking. In shredded cheese, it functions as a separation aid by binding excess surface moisture, reducing stickiness, and helping maintain particle separation and free flow during handling and storage.
